A friend has a Maple Syrup operation near here. I visited the other day to see it. There are 1500 trees tapped and the sap is delivered by pipelines to the evaporator building.
It is a long way from the traditional way of collecting sap to make Maple Syrup.
But the syrup tastes just as good!
Temperatures have been low enough lately that the sap won’t flow for at least another week. But we are ready!


Lovely, lovely Maple Syrup…(For some reason I feel sorry for the trees? Almost as if they’re being used? MY imagination is going bananas!!) x
